The federal standard for NO₂ exposure is 100 parts per billion (ppb) in an hour. Cooking with a gas stove will cause NO₂ exposure to well exceed the recommended exposure level set by the government. Unfortunately, there is no federal standard for indoor air pollution.

Nitrogen dioxide, NO2, is one of the main pollutants emitted by using a gas stove. The act of cooking on a gas stove can result in levels of NO2 that surpass the legal levels allowed outdoors. There are federal regulations on outdoor air pollution and NO2 levels, but no regulation on indoor air pollution.
